Golden Fried Rice
Ingredients:
* 3 cups day-old rice
* 3 eggs, yolks and whites separated
* ½ tsp white pepper, plus more to taste
* Kosher salt, to taste
* ½ tsp sugar
* 2 tsp soy sauce
* 1 tsp fish sauce
* 1 cup frozen carrots and peas
* ½ onion, diced
* 5 garlic cloves, smashed
* ¼ cup scallions, chopped (reserve greens for garnish)
* 1 lb shrimp, peeled and deveined
Instructions:
- Coat the Rice: Mix egg yolks with rice until evenly coated. Season with white pepper and salt.
- Sauté Aromatics: Heat oil in a wok over high heat. Add onions and scallions, sauté for 2 minutes. Stir in garlic and cook for another 2 minutes.
- Cook Veggies & Rice: Add frozen carrots and peas, cooking for 3-4 minutes. Stir in rice and stir-fry for 4-5 minutes on high heat. Season with soy sauce, fish sauce, sugar, and more white pepper if needed.
- Cook the Eggs: Push rice to one side of the pan. Pour in egg whites and scramble until set, then mix into the rice.
- Cook the Shrimp: In a separate pan, sauté shrimp over high heat for 2-3 minutes until fully cooked.
- Serve & Garnish: Top with scallion greens and enjoy!
